The Southern Highlands’ Grandest Dining Experience Has Been Reimagined

Bowral is a treasure trove of delicious food and stylish restaurants, but for a meal you won’t soon forget, venture down the winding back roads that, as night falls, feel like they’re leading you nowhere. Then, just when you begin to wonder if you’ve taken a wrong turn, you’ll discover the real pot of gold at the end of the rainbow: Horderns Restaurant at Ardour Milton Park.

Long before luxury weekend escapes became the norm, Ardour Milton Park was where Sydney and Canberra’s most fashionable families came to winter. That sense of occasion still lingers today. Whether you arrive by private road transfer, chartered helicopter or simply drive in for dinner, Horderns Restaurant offers a taste of the estate’s enduring grandeur, without requiring an overnight stay.

The entire estate has recently undergone a multi-million dollar renovation. The dining room itself is a showstopper. Light-filled by day and softly glowing by night, it looks out over the famed gardens, with dusty pink and deep green tones, floral touches and plush upholstered seating nodding gently to the home’s Edwardian past. It’s refined without being precious; the sort of room where an anniversary dinner and a long, chatty catch-up feel equally at home. Service follows suit: attentive, knowledgeable and warm.

Leading the kitchen is renowned Executive Chef Mark Holland, whose pan-European approach draws on a career spanning Sydney favourites Nomad and Paddington Inn, as well as the acclaimed Box Tree in the UK. His menu celebrates the best seasonal produce from the Southern Highlands and beyond, designed to be savoured slowly and shared generously around the table.

Small Plates, Big Impressions

We recommend beginning with a selection of snack plates to share. The seared Canadian scallops, served with cauliflower, spicy nduja and burnt lemon butter, are an absolute standout and a dish we’d order again in a heartbeat. For fellow seafood lovers, the charred octopus is equally impressive, paired with crispy potato rosti, romesco and pickled cucumber for the perfect balance of richness and acidity.

The Entrées Worth Saving Room For

You’ll want to arrive hungry because next up are the entrées. Cheese lovers, this one’s for you: the Vanella stracciatella is a standout, paired with zucchini, pickled shallots, mint and confit lemon for a dish that’s fresh, creamy and utterly moreish. Balance it with the Wagyu beef bresaola and house-made pickles, where the richness of the cured meat meets the sharpness of the pickles for the perfect bite.

The Main Event

There’s a wonderfully diverse selection of mains to choose from. The XL Yamba prawns with black garlic and squid ink are a true highlight, delivering plenty of coastal flavour and depth. Vegetarians are well looked after with the twice-cooked eggplant cotoletta, while those with a heartier appetite should look no further than the slow-braised Cowra lamb shoulder for two, served with fennel and salsa verde. These aren’t dishes to be rushed. They’re best enjoyed slowly with good wine and great company.

A Sweet Finale

Dessert is where the evening reaches its sweetest crescendo. The Eton mess is a must-order for the table, served tableside with strawberries, whipped white chocolate and vanilla cream, and honeycomb meringue creating a beautiful balance of freshness, sweetness and texture. For something richer, the dark chocolate delice with mascarpone sorbet and hazelnut praline is pure indulgence, while a selection of Southern Highlands and South Coast cheeses offers a more savoury way to linger over the final course.

After Dinner, There’s Polo

A meal at Horderns could easily fill an entire evening, but if you still have room for one more indulgent moment, make your way to the beautifully appointed Polo Bar for a nightcap. Sink into a plush armchair, cocktail in hand, listening to the crackle of the fireplace – the perfect backdrop to finish the evening.

There’s even a private adjoining charcuterie room. After a few courses at Horderns, you may find yourself with little room left for anything else, so consider it a delicious reason to plan your next visit.

If you’re staying overnight at Ardour Milton Park, the indulgence continues the following morning with a thoughtfully prepared hamper from Polo Bar, ready to take with you as you explore the estate grounds.

The Consensus

Each dish at Horderns is a testament to the beauty of seasonal ingredients, thoughtfully prepared and allowed to shine in the hands of a skilled kitchen team. But what makes the experience truly memorable is the way it all comes together: the grand setting, the warm hospitality and the feeling that you’re part of something that has been cherished for generations.

More than a century later, Ardour Milton Park is still doing what it does best: bringing people together over beautiful food, meaningful moments and a little touch of old-world elegance in one of the Southern Highlands’ most treasured settings.
